Best Buds
We opened the house tonight since it was so hot in here. (I know right...it's January....but Eddy refuses to turn the air on since we are technically in Winter...haha). So E loves the wind in his face and found his way to the front room. We were watching him and then his BFF Mason came and joined!!

New Friends at PPK
Yesterday, we went down and watched Eddy play in the annual Punt, Pass, and Kick tournament with his company. Unfortunately, Eddy didn't win, he came in second. We are still very proud! He did really well. I may have been more focused....but Eddy neglected to tell me what wives normally keep score. PS-he told me this on the way there.
E made some new friends while daddy played. He even scored some goldfish from his new little friend Addie.

So Fresh
So I left my sunglasses at a friends house and have been using these bright blue ones I got from the Color me Rad run. So I picked up some sweet shades from Walmart for $5. If anyone knows me, I either lose them or melt them. #winning
Chicken Tacos
I love crock pots and its the year of the crock pot in our house. I threw 6 chicken beasts and a jar of salsa into the pot this morning before I left for work. I made extra so we can have leftovers. When I got home, the chicken was so tender that when I pulled it out out of the crock pot, it fell apart!! It was so yummy!! I put it on a fat free taco shell with some reduced fat sour cream, lettuce, tomatoes, and reduced fat cheese. It's a definite keeper!!

Big Boy!!
E is growing up so fast!! Everyday he does something new that always brings a smile to our faces. He has become more aware of Mason. I don't know how Mason feels about that, but Mason is so good around him!! Here are some pics of E!

Hanging in the Classroom
Yesterday I brought E to school (everyone loves him!!). We hang out in the classroom and one of my students Hali always comes and hangs out with us. We watched Mickey Mouse. He loved it!!

Getting My Workout On!!
I was running my normal interval run on the treadmill today at LA Fitness when a woman named Peggy asked me if I wanted to try bootcamp. I was like sure, I can do this. I loved it!! It was such a great workout. I can't wait to go back next Tuesday!
A Little Late...
Chicken Souvlaki!!
Our dinners have been what we normally eat, so I decided to change it up. I actually got this idea from my co-worker Kim. Eddy grilled chicken breasts with a little bit of Greek seasoning. I made a tzatziki sauce that went with it. I heated up pita pockets and cut them in half. I put some of the sauce, layered tomatoes (which were so good I ate more just plain), the grilled chicken cut into pieces, and some lettuce. It was awesome!!! Definitely a keeper :) I made some fresh green beans for a side.
As for the tzatziki sauce, I didn't measure out, I just tasted tested aster I added each ingredient.
Tzatziki Sauce
1 cup Greek yogurt
Fresh dill
Scallions ( I used 3)
Cucumber ( I used half, peeled and took the seeds out, I also left them in big because eddy doesn't like them)
Garlic (a little)
Salt and pepper to taste
I mixed it all together and let it sit for about 30 minutes.

Eddy and me!!

One of those Days...
Eddy was a little cranky tonight. So we stopped eating dinner, changed the diaper, and then had a "no pants, no shirt" kind of night. Had a good time on dad's shoulders.

Eddy loves digging his face into everything...Mickey, his pillow, and anything fluffy. It was laundry night and he decided to play!! He was having a blast.

Seriously Ben and Jerry???
How am I supposed to diet when Ben and Jerry's ice cream is BOGO at Publix??? I love the Half-Baked one where there is cookie dough and brownie bites in chocolate ice cream. But to reach my goal, I decided not to get that and I got fresh strawberries and fat free cool whip. Lame.

NYE 2013
Last night we went over to our friends house, Heather and Chris, to celebrate NYE. They live across the street which made it very nice, all we had to do was walk there..lol. We had a blast!! They are super nice and some of our other neighbors were there. It was a nice way to ring in the New Year. I made a taco dip and it was a hit! The recipe is below.
7 Layer Taco Dip (last night mine was only 6)
2 cans refried beans (I use Old El Paso fat free)
1 packet taco seasoning
1 small can diced green chilis
Sour cream (I use reduced far)
Shredded lettuce
Cheese (I use reduce fat sharp cheddar)
Tomatoes
Taco sauce
Guacamole (I didn't use this last night, but plan to do it next time...I make my own..so yummy)
Mix beans, chilis, and taco seasoning. Spread bean mixture into whatever dish you use. Spread the sour cream evenly over the beans and then pour enough taco sauce to cover the sour cream. Layer the lettuce, cheese, and then tomato. Serve with tortilla chips.
