College Football is Here!!

So college football is back and I'm super stoked!! I went to the gym this morning and had a good workout. Then me and E went to Panera for breakfast. When we got home I tried to put him down for a a nap (apparently I didn't get the memo that he wasn't tired) and he ended up crying for 20 minutes. I got him and some toys to come and hang out while I showered. So when I was getting ready (was going to meet Eddy to watch football), E decided to re-decorate our bathroom. He kept himself occupied and I was able to get ready. Sammy (E's fave sitter) came over for a few hours so we could go out for a bit. He loves her and gave her a hug before she left :) Too cute!

So Handsome

E's hair grows so fast and it's thick. We take him to the same girl (Donetta..shes amazing!!) that Eddy goes too. He cries the whole time and always has to sit in Dad's lap. Well today he was a big boy and sat in the chair on a booster seat. He still cried the whole time, but we had a small victory today! Here are some pics...before, during, and after.

Start Him Early!!

So I have posted before that E loves to read. I was doing some lesson plans...back to school :(....and E opened the 5th grade science book and started to flip the pages and mumble (he does this when he reads...too cute). Starting him early!!

Turn my back for 1 second...

So E has mastered opening doors. And the only one we can't lock is the pantry. When I get home after school, I try to make dinner and get lunches ready. I am cutting an apple and its super quiet (if anyone knows....when a baby is quiet...it's not good). He was quite pleased with himself. 

Baby Planking

So E has learned to climb (and is pretty good at it :/). So he likes to climb onto our chairs at our kitchen table. I look over and see this.....

I tried not to laugh. Lol. I had to keep face and be firm! But it's hard when he's so cute :)

E + M = BFF

So when E was younger, the only show he was into was Mickey. He was into into it, but not for long. We did Disney for his first birthday and he LOVED it!!!! Now, he is addicted!!!! He will sit there for about 10 minutes and watch Mickey (much better..he used to watch the intro and get bored..lol). He loves the hot dog dance!! He sleeps with his Mickey and I snapped this the other night of him sleeping :)

As I make dinner, E likes to play in the kitchen. Gave him some items and he had a great time!!

Top 5 Movies

So my husband and I love movies...especially funny ones. We were discussing Jim Carrey movies and talked about his top 5 ones. Dumb and Dumber is definitely up there and it is a great movie!!! Laugh every time when we watch it.  

Eggplant Pizza

I tried another new dish tonight: eggplant pizza. I used fresh eggplant, my spaghetti sauce, fresh grated Parmesan cheese, and mozzarella cheese. I cut the eggplant, salted it, and let it sit on paper towel to let the water come out ( I didn't make this up...Julia Child did..lol). I baked it for 25 minutes at 375. Then I added my sauce and cheeses and broiled it. It was yummy!! I want to make eggplant Parmesan like Anthony's!!! But this was good for a first time :)

Trying Something New

So we have been doing well (for the most part) on clean eating and just eating healthy. I have been trying to limit carbs (not completely...just cutting down). I made spaghetti squash tonight instead of using noodles for spaghetti. I put my homemade sauce over it and it's delicious!! And filling. I think I need to cook it a little longer because its still a little crunchy. But it was yummy!! I can't wait to try more dishes!!

Jags Family and Scrimmage Night

Last night, we went down to EverBank field and watched the Jaguars play a scrimmage game. Actually, we watched the first 2 series and then left. E was done. It was hot and he wanted to move!! But he did really well for the most part :)

Summer Fun!

We have been going to the beach a lot lately. E loves it!! After we hit up the beach, we go to the splash pad. It's a fun family day!!

Channeling My Inner Creativity!!

So the theme this year at my school is sports with a focus on team work. I wanted to hang lanterns outside my classroom that were sports themed. I found a football, but struggled with a baseball, basketball, and soccer ball. I bought 2 white lanterns and an orange lantern. I bought black and red pipe cleaners. A few hours and burnt fingers later, I made them!! I still have to make the soccer ball, but that seems easy :)
