Dad had to work late last night, so it was just me and E for dinner. We had fun! He dined on turkey hot dogs, blueberries, sweet potatoes, and he just had to have some of my banana (his fave). After dinner, I have E a bath. He went splash crazy!!! I was soaking wet. He must be learning this from his cousins Dillon and Jack!

Running Again!!!
I have started running again and it feels great! I did 2 miles this morning. My goal is to be able to run 4 miles by Eddy's 1st birthday, which is in a little over a month.

Lunch at the Columbia
Today we drove down to St. Augustine and had lunch at the Columbia as part of Eddy's birthday weekend! We split the 1905 salad (best salad ever) and I had the Cuban. They also have very yummy bread!!
30!!
Happy Birthday to the most wonderful father and husband, Eddy Thomas. Today is his 30th birthday!! This past Saturday, I wrote on sticky notes 30 reasons why I love him :) I also got him a cake...which is decorated like Valentine's Day...I know it's his bday, but that's the only thing they had. It still tasted yummy!! Love you babe!!

My New Obsession
I found these while I was walking around Walmart one day. These are so yummy!! I eat a few every night to get my chocolate fix. Plus they have antioxidants which make me feel a little better about eating chocolate.

On the road again!

Back in the gym
So I ran a 5k in late January and ever since the back of my left leg (upper towards my back) has been in a lot of pain. I don't know if I pulled something or not, but it was painful. I tried to workout after, but it was a no go. I waited patiently (not really..was dying to get back in the gym) and today was the first day I have been back. I did yoga since its calming (had a day from you know what) and its not intense. No pain!! My leg feels great. I think me and my boys are going to go for a short run tomorrow to see how it feels. I'll keep you updated :)

10 Months
We still haven't taken his photo yet (working on it). Eddy is a busy bee!! All over the place. Crawling like a wild man, pulling himself up everywhere, and getting into EVERYTHING!!! Today he crawled up on the dishwasher door....is he serious???

Mom's Spaghetti Sauce
Today me and E went to the grocery store without dad (never a good idea..lol). I decided since we have all day that I would make some spaghetti sauce. There is sort of a recipe, but my mom makes the best sauce! I make mine and while its still yummy, hers is better. Here it is (alter if need be...there is no set recipe):
2 large cans diced tomatoes
2 large cans tomato sauce
2 large cans puréed tomatoes
2 medium cans tomato paste
Garlic
Green pepper
Onion
Sugar
Italian seasoning
Sauté the peppers and onions. Add garlic in when onions are translucent. Cook for a minute or 2. Add all of the tomatoes. Add Italian seasoning (I don't measure, just add enough). Add a little bit of sugar to cut down the acidity of the tomatoes. Cook on high for 1 hour, stirring frequently. Turn heat down and simmer. The longer you let it cook, the better it is :)
I don't add meat to my sauce. I normally make meatballs to go with it. Eddy loves this meal!!
This makes a lot, but the sauce freezes nicely.
