I tried another new dish tonight: eggplant pizza. I used fresh eggplant, my spaghetti sauce, fresh grated Parmesan cheese, and mozzarella cheese. I cut the eggplant, salted it, and let it sit on paper towel to let the water come out ( I didn't make this up...Julia Child did..lol). I baked it for 25 minutes at 375. Then I added my sauce and cheeses and broiled it. It was yummy!! I want to make eggplant Parmesan like Anthony's!!! But this was good for a first time :)
