Oatmeal Chocolate Chip Cookies

I am making cookies for a cookie swap and was having a hard time deciding what to make. I have finally found the perfect recipe for chocolate chip cookies (add instant vanilla pudding). But I always make those. I though about making some of the Christmas cookies I make, but those are time consuming and I'm not doing that. Lol. So I decided on Oatmeal Chocolate Chip Cookies. I got the recipe from a woman that I used to work for in Tallahassee. She is an amazing cook and baker (second to my mom). I got this recipe from her. I like these cookies because they are chewy and soft.

Oatmeal Chocolate Chip Cookies

1 c. unsalted butter
3/4 c. sugar
3/4 c. dark brown sugar
2 eggs
1 tsp. vanilla
1 tsp. baking soda
2 1/2 c. flour
1 c. oatmeal (I used Publix's brand Old Fashioned Oats)
1 1/2 c. semi-sweet chocolate chips

Cream butter and sugar. Add eggs and vanilla, mix well. Add dry ingredients. Mix on low speed until blended. Stir in oatmeal and chocolate chips. Bake for 8-10 minutes @ 350 degrees. (I bake mine for 10.....depends on oven)

Ingredients
Cream butter and sugars.

Add eggs and vanilla, blend.

Add dry ingredients. I do half at a time, if not there's a hot mess.
Stir in oatmeal and chocolate chips.
Spoon onto greased pan or parchment paper. I use parchment paper so I don't have to extra dishes.
